Nami, the acclaimed contemporary Japanese restaurant nestled within the Lake Nona Wave Hotel, has unveiled an array of inventive dishes, desserts, and a seasonal cocktail, further solidifying its reputation for culinary excellence.
Under the guidance of Culinary Director Freddy Money and Executive Chef Jason Beliveau, Nami's latest menu additions showcase a harmonious blend of traditional Japanese techniques and global flavors.
Among the new offerings, the Cured Salmon ($23) pairs delicate fish with crème fraîche and brioche croutons, while the Madai ($24) features miso-lime and blue basil, with an option to add caviar for an elevated experience.
For those who enjoy shareable plates, the Nami Wedge ($19) reimagines the classic salad with smoked bacon and tomato wafu dressing, and the Hokkaido Scallops ($32) are complemented by buttermilk and ginger.
Other notable additions include the indulgent Lobster ($120) served with smoked chili, fried rice, and jidori egg, and the flavorful Yakitori Chicken Wings ($22) topped with Yuzu Kosho, Charred Scallion Aioli, and a Tare glaze derived from the chicken's own bones.
Dessert enthusiasts can delight in the comforting Koshihikari Rice Pudding ($15) adorned with red berries and almonds, or the vibrant Tropical Fruit Vacherin ($15), showcasing a medley of tropical fruits in layered textures.
To complement these culinary creations, Nami introduces the Harvest Old Fashioned ($24), a seasonal cocktail crafted with Colonel E.H. Taylor Small Batch Bourbon, apple bitters, cardamom, and a Luxardo cherry, offering a rich, spiced note that mirrors the kitchen's precision and balance.
"Our inspiration for this new menu came from the desire to create moments that stay with our guests long after the meal," said Freddy Money, Tavistock Restaurant Collection culinary director. "Each plate and cocktail is crafted to engage the senses and transform dining into a memorable experience. It's not just about flavor; it's about the artistry and feeling behind every bite."
With its MICHELIN recognition, Nami continues to elevate its status as one of the region's premier dining destinations, offering an intimate 67-seat setting with hospitality-driven service. Guests can share seasonally inspired dishes or reserve a coveted spot at the 10-seat Chef's Counter, available Thursdays through Saturdays, for a multi-course tasting experience that highlights storytelling and culinary craft.
